You save and plan to make the perfect EPK video, but you didn't take the time or budget the money for audio. Nothing says amateur production like bad audio, even with the best video money can buy. Always have a professional who's done this more times than they can count collect your audio from your gig or interview whenever possible. It will make your video rise above everyone else's and make sure you sound as good as you look!
If you don't know where to look for a professional audio engineer, always talk to your EPK producer and let them know how important good sound is to you in this project. More than likely they'll know somebody they can bring in to make sure that the audio can be as good as it possibly can.

Multitracking.
If live performance is part of your EPK, then by all means try to capture audio on a multitrack recorder. It allows for more convenient editing and correction later on.
Not your best performance?
Missed a lyric?
Bass player had a small meltdown halfway through the song?
Go back and fix it! This is the best way to optimize your performance when recording! If you just plug a recorder into the mixer or capture with live mics, any mistake is there for good and not going anywhere.
Capture all those tracks!
